When it comes to desserts I am a chocolate girl all the way, but I have another favorite and that is Banana Bread. I love the fact that I can take my banana's that are about to be thrown away and give them new life in the form of a bread. And let's be honest, is there anything more heavenly then the smell of Banana Bread baking away in the oven? I think not.
There are many recipes out there, but I have found one that is absolutely fool-proof. I've made this recipe many times and it has never failed me. This bread has a crunchy outer edge and a moist chewy inside. Basically, it's to die for.
There is, of course, lighter ways you can make a Banana Bread recipe, this is not that kind of recipe. To me when you eat dessert, you eat dessert. Am I right? All things in moderation.
Here's the recipe.
1/2 cup softened butter
1 cup sugar
2 eggs beaten
4 ripe banana's, crushed
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla
With a mixer, cream together butter and sugar.
Add eggs and crushed bananas. (the darker the banana's the better)
Sift together flour, baking soda and salt. Add to creamed mixture. Add vanilla.
Pour into greased and floured loaf pan.
Bake at 350 degrees for 60 minutes.
Cool for 15 minutes and remove from pan to cool completely on baking rack.
Put in your mouth and sigh with contentment- ha ha.
*This recipe is a good jumping off point. Feel free to make the bread as is or liven it up a little. Walnuts, or Chocolate Chips are a few things that come to mind. Feel free to customize to your hearts content. Enjoy!
